Almond Polenta Cake – GLUTEN FREE

6 eggs
500grams coconut sugar or raw sugar
100grams butter – softened
3 Tablespoons raw honey
1 lime, zested
1 tsp grated nutmeg
1 tsp cardamom seeds, ground
250grams chopped almonds
200grams polenta
125grams grated orange peel

Preheat oven to 150 degrees. Beat eggs and sugar together. Add butter, honey, lime zest and spices while beating. Add in almonds, polenta and orange peel. Pour into a greased cake tin. Bake for 1 hour, checking regularly to ensure it does not burn.
